Food Matters

Notes from the documentary : Food Matters
- Eat fresh plant and fruits. Older the veggies/fruits are, more nutirition is lost from them.
- Cooking veggies reduces the nutrients in them. Cooked food is treated as a toxin by the body.
- Super food plant based protein rich food
    - liquefy the food so that it can be absorbed much faster by the body.
    - cacao bean has Cr, Fe, Mg, Zn, Co, anti oxident
    - Blueberry, raw honey, turmeric, goji berry, wheat grass
    - spirulina - max protein food
- Take Multi-Vitamins- supplement
- High doses of Vitamin-C curing diseases in 1940s
- Vitamin E - heart disase, healing burns
- Vitamin C 60mg/day- anti toxin, mood elevator, general cough/cold
    - Vitamin C is broken to generate Adrenaline.
- Cardio vascular diseases are irreversible by modern medicine
- Plant based, high-fiber/high-protein diet, grown organically.
- Most of the drugs have adverse side reaction
- 106000 patients die of prescribed Pharma drugs in US every  year. 10 in 26 years allegedly by vitamins.
- Medical journals exist that are black-listed and not indexed by American Medical library
- Good health makes lot of sense, not dollars, hence the hesitation from Medical industry.
- All drugs are based firmly on trials is not true. Only two trials are needed to show better results than placebo to get a license. Other trials where the drug failed do not have to be published.
- Drugs are tested only for the purpose of getting the license. When given to actual people, there are side effects. Some of them are depression, heard disease, and the like. They don't kill you but slows them down drastically.
- Short-term medications to help the body is fine. No long-term medications.
- Are these drugs the only way to cure the disease? - No.
- Abram Hoffer & Bill Williams (depression);. Niacin = Vitamin B3 for alcoholics. Big time anti-depressent. No need to go to psychiatrist.
- Side effects of Prozac anxiety, insomnia, inner restlessness, suicidal thoughts and self mutilation (mentioned in the patent application for Prozac R). Company denied it for 10 years.
- 2 handfuls of cashews = one prescription dose of Prozac.
- Mind is influenced by the nutrients going into the body.
- All drugs are toxic. No exceptions.
- Mercury fillings are toxic and gets in to brain.
- Detoxi-fy. Herbs, water are critical in cleansing.
- Upon rising drink LOTS of water. 1 liter or 2.
- Chemo-s are toxic and create carcinogens.
- Max Gersen Plus Nutritional Therapy:Large doses of Vitamins, with fresh vegetables produced 50 % cure rate for cancer patients compared to the 30% cure rate in Chemo.
- Normal healthy body will not/cannot develop cancer.
- if someone is a cancer survivor means, they have been living with the cancer for 5 years through various therapies. it does not mean they have been cured fully.
- It is illegal in most countries around the world to treat cancer patients with nutritional therapy. The only legal means are surgery, radiation therapy and chemotherapy.
- People working in the medical industry dealing with cancer could be very sincere in their efforts, but are sincerely wrong in their approach
- Omega 3, selenium, germanium, green tea, fish- anti-cancer
- Japanese woman in japan have very less rate of breast cancer(<1%). Bring her to US, and change her life style increases to 13%.
- Give an IV of vitamin C (30k, 60K, 100K mg per day) before/during chemo. Absolutely no side effects. upto 250g of vitamin c has not caused any adverse effect.
- Govt does not know what is not told to them by medical industry/lobbies
- Food can change your mood. Bad food action in 20s reflect in 50s & 60s
- Take responsibility for your nutrients and health. Have 80% high fiber-high protein veggies in every meal.

Carrotacles

It was time to cook my lunch. I had been thinking about making something different with Carrots for couple of days, and had visualized how the end result should look and taste like. Most of the times, getting this right is the main issue for me. Since that got figured out, I had to just try and do it. Carrots are bit easy to cook as well, hence was confident that I will not burn it.

I need to clarify one thing though.. I am not writing this to brag or anything. I know lots of my friends and their wives are amazing cooks, and this is my humble effort to inspire them to make more delicious stuff.. and don't forget to call me to taste them as well ;)

Ok. here we go.. I took two medium sized carrots, and peeled them off. Then cut them from about 10% of the main stem to all the way down. So the top portion of the carrot stays in tact, and the tip portion sort of spreads out like tentacles. (Carrotacles = Carrots+ tentacles ;) ) Well seasoned folks would have a much smoother cut, but this one served its purpose though.



Took the non-stick pan, and added a tbsp of oil. While it was heating up in slow heat, prepared a mix of Dhaniya powder, garam masala,  chilly powder, a pinch of salt and some oil.

Took this mix and slightly stuffed it inside the carrots. Depending on one's taste, the mix can be varied and the amount that gets stuffed can also be varied. I am not a biggie on masala.. so it was all on smaller quantity, but sort of uniformly spread. After stuffing the mix, placed the carrots on the pan and kept the heat low.


Open cooked both the carrots in slow heat for few minutes and rotating them every 10-15 seconds. In about 5 minutes or so, they started to look good.

After 5 minutes, covered the pan for 1-2 minutes with the lid just to avoid the skin sticking to the pan or burning. This also avoided the necessity of more oil. Removed the lid and open-cooked them for another 6-8 minutes. Luckily I had couple of pieces of carrots fallen from the cut ones, and could use them to ensure carrots were cooked properly, and tasted fine. After about 8-10 minutes, it was time to add some more accompaniments to the Carrotacles. Since I did not have Cilantro, decided to use green bell peppers to add some colour. I like Carrots with onions, hence added couple of onion slices. Here is the presentation ;)

Incidentally, I had a roti; heated it up, and rolled one of the carrots inside it, and that was yummy. Along with pearl onion kuzhambu , it was awesome. To top it off, it was delicious with curd rice. Was very happy with the result, and planning to make a sort of Carrotacle jugalbandhi with cucumber or zucchini sometime.
